3 Easter Biscuits

Ingredients

  • 5g (3oz) butter
  • 75g (3oz) caster sugar
  • 1 egg yolk
  • pinch of mixed spice
  • 50g (2oz) currants 15g (1⁄2oz)
  • mixed peel 175g (6oz)
  • plain flour sifted
  • A little milk
  • 1 egg white
  • caster sugar

Method

Time needed: 23 hours.

  1. Preheat oven

    180C/350F/Gas4

  2. Add Ingredients to a Bowl

    Soften butter, add sugar, cream till light & fluffy.

  3. Mix in some flavor

    Add egg yolk, spice, peel & flour, mix to a soft dough with milk.

  4. Add some Sugar

    Stir in sugar and dried fruit, add milk
    and mix to soft consistency.

  5. Roll out

    Roll out the dough thinly & cut into 3” rounds.

  6. Bake

    Place on baking sheet, bake for 15-20mins.

  7. Glaze

    After 10mins brush with egg white and sprinkle with caster sugar. Return to oven until light golden brown, cool on wire rack.
